FILLINGS

 

BLACK BEANS PRONTO

  • Oil

  • 1 onion (peeled, chopped)

  • 2 cloves garlic (peeled, chopped)

  • 5 button mushrooms (chopped)

  • 2 x cans of black beans (rinsed)

  • 1 teaspoon cumin

  • 1/2 teaspoon smoked paprika

  • Salt and Pepper

In a pan heat oil, onion and garlic over medium heat until soft.

Add mushrooms and heat until soft.

Add beans, spices and season with salt and pepper and heat through, you can mash beans a little if you want.

Now you you have a beans filling for your tacos, quesadillas, or tortilla bake.

 

Chicken and Beans

  • Oil

  • 1 onion (peeled, chopped)

  • 2 cloves garlic (peeled, chopped)

  • 2 tablespoons chipotle sauce (or tomato paste)

  • 1 teaspoon ground cumin

  • 1 handful fresh coriander (chopped)

  • 1 can of pinto beans (rinsed)

  • 1 can of chopped tomatoes

  • 500g cooked deboned chicken

  • Salt and Pepper

In a heavy pan heat oil, onion and garlic over medium heat until soft.

Stir in the remaining ingredients, cover and simmer for 20 minutes until thick. 

Serve with salad on warm tortillas with a salsa.
