Guacamole

Our guacamole varies depending on what we have on hand at the time. If avocados are not very creamy then we sometimes grind in a handful of cashews.

Use a motar and pestle or blender to combine the following ingredients:

Ingredients

  • 2 or 3 avocados (de-stoned and skins removed)

  • 2 cloves garlic (peeled and chopped)

  • Juice of 1 lime or lemon

  • 1/4 red onion (peeled and chopped)

  • 1 red tomato (diced)

  • a dash of hot sauce (we use Kaitaia Fire or Apostle Hot Sauce) or a fresh chilli de-seeded and finely diced

  • handful of coriander

  • salt and pepper

Red salsa

Throw first 4 ingredients in a pan and cook on high heat, turning until charred. Transfer ingredients from heat into a bowl and use a hand whiz to combine. Add the remaining ingredients.

Ingredients

  • 2 tomatoes (whole)

  • half a capsicum (cut in lengths)

  • 2 cloves garlic (peeled, whole)

  • 1/4 red onion (peeled, whole)

  • Juice of 1 lime or lemon

  • a dash of hot sauce (we use Kaitaia Fire or Apostle Hot Sauce) or add half a de-seeded chilli to pan

  • handful of coriander (garnish)

  • salt and pepper
