gaucamole & salsa
Guacamole
Our guacamole varies depending on what we have on hand at the time. If avocados are not very creamy then we sometimes grind in a handful of cashews.
Use a motar and pestle or blender to combine the following ingredients:
Ingredients
2 or 3 avocados (de-stoned and skins removed)
2 cloves garlic (peeled and chopped)
Juice of 1 lime or lemon
1/4 red onion (peeled and chopped)
1 red tomato (diced)
a dash of hot sauce (we use Kaitaia Fire or Apostle Hot Sauce) or a fresh chilli de-seeded and finely diced
handful of coriander
salt and pepper
Red salsa
Throw first 4 ingredients in a pan and cook on high heat, turning until charred. Transfer ingredients from heat into a bowl and use a hand whiz to combine. Add the remaining ingredients.

2 tomatoes (whole)
half a capsicum (cut in lengths)
2 cloves garlic (peeled, whole)
1/4 red onion (peeled, whole)
Juice of 1 lime or lemon
a dash of hot sauce (we use Kaitaia Fire or Apostle Hot Sauce) or add half a de-seeded chilli to pan
handful of coriander (garnish)
salt and pepper
